My experimentation with avocados has never reached the next level. Throwing myself a quick toast every morning before I dash out the door has been one of my basic morning chores. Then, there came a day when a sudden grocery shortage let me go creative with this subtropical fruit (I’ve never been so grateful for a grocery shortage before!). Since that very day, avocado has been gracing my kitchen in many ways.
The options to prepare a fulfilling meal with avocado are truly endless. Whether I slice it, cube it, or mash it, it magically satisfies my taste buds. I would never want to miss that magic. With that being said, I have included some quick and healthy avocado recipes as part of my daily diet. So, here I am sharing these ideas that will inspire many of you who are looking for some inspiration to upgrade your meal options.
Avocado-Grilled Chicken Cobb Salad
The moment you hear the word ‘salad’, you cringe at the sight of a bunch of bland lettuce that you don’t want to crunch. Well, you don’t need to munch on your regular salad because I have a new version to try out. This vibrant avocado chicken cobb salad has all the crunchiness of cucumber, the tanginess of cherry tomatoes, the freshness of ripe avocado, and a fair amount of juicy chicken. It might sound like a regular salad but trust me adding some sliced avocado along with chopped hard-boiled eggs makes a huge difference. Have this bowl of bliss with your favorite dressing.

Wraps are incredibly easy to make and what else do you need when you have all the items ready by hand? Fry your preferred veggies along with the paneer, (for a healthier option, you can add unfried paneer), grilled chicken (the chicken needs to be prepared beforehand to save time), chop some avocados, and throw them into a giant tortilla to wrap altogether and gobble.

After having guacamole in so many restaurants, I was inspired to make my version at home. I have never had something so easy to make and so delicious to taste. My version includes chopped onion, tomatoes, cilantro, and lime juice mixed well with smashed avocado. That’s just it. They are just too good and complement well the main course. Do give it a try!
