As a keto dieter, I eat Pork Rinds to get both my snack and salt fix in. The other day I noticed that a popular brand had added “coconut palm sugar”. Sugar??? That’s anti keto for the most part. What’s the coconut sugar and diabetes connection? Is coconut sugar as bad as cane sugar?

Where Is Coconut Sugar From?
The sugar comes from coconut palm trees that is made from coconut palm sugar. Since it has the “coconut” name attached, it is perceived to be more nutritious.

When we’re talking about cane sugar or regular sugar or its byproduct, high fructose corn syrup, we’re discussing a substance with no nutrition and a high glycemic index that raises our insulin levels and can lead to diabetes and body fat.

Coconut Palm Sugar however is high in iron, zinc, calcium, as well as polyphenols, and antioxidants. Coconut palm sugar also contains inulin that has been shown in research to reduce the speed at which glucose gets absorbed.
