18. Lightened Up Vegetable Lasagna Casserole

I made this last night and it was awesome! I also love that it’s a “method” more than a recipe. Next time I’m going to use Butternut squash and maybe potatoes in the crust? And ricotta cheese because I do like ricotta. Or cottage cheese. And spaghetti sauce instead of salsa, although I love the kick the salsa gave. And maybe cut back on the cheese a little. And maybe add more black beans. So many options!!! What a great recipe thank you so much!!
