Professional Sports Catering creates new menu options for 2019

A new season of baseball also brings a new season of fresh flavors to Chickasaw Bricktown Ballpark.

Visits to stadium concession stands or flips through the pages of the entertainment suite menu yield innovative options created by Professional Sports Catering, the official food and beverage partner of the OKC Dodgers.

Homestand Specials will offer new hamburger and hot dog creations each month, while some new food additions will be available throughout the entire season on the main concourse and suite levels.

Regional Executive Chef Will Fenwick and his Professional Sports Catering colleagues work year-round to bring inventive food options to Chickasaw Bricktown Ballpark each season.

Considerations include current trends around the sports industry, as well as flavors and products from the Oklahoma City area, but inspiration may strike at any time — while visiting a restaurant, browsing online or even during a conversation.

“We are trying to figure out ways we can be local and ways we can cater to the palates of our guests coming in,” Fenwick said. “I’m around town looking at something (thinking): ‘That would be good for a dog; that would be good for a pizza, or for this or that.’

“Just coming up with those things is really the route we try — to keep it new and to keep it invigorating for our guests to come in and have that different take.”

On the Concourse

Available to all guests at Chickasaw Bricktown Ballpark, concessions throughout the main concourse will have new food choices popping up all season long.

At Burgertopia, located behind home plate and section 112, the Smoked Gouda Burger joins the everyday menu, featuring a half-pound, fresh-cut beef patty topped with smoked gouda, bacon, bourbon onions and barbecue aioli.

Also at Burgertopia, fresh-cut Bacon Cheese Fries are new to the menu. They join returning favorite burgers such as the OKC Original, All-American and Black Bean.

At Franx, now located behind home plate and section 111, the Taco Dog joins the menu. An all-beef hot dog will be topped with taco meat, cheddar cheese, shredded lettuce, pico de gallo, sour cream and served in a crunchy corn taco shell enveloped in refried beans and a soft flour tortilla.

Also at Franx, the COOP Brat will be braised in COOP beer before being topped with beer-braised cabbage, house-made COOP beer mustard and served in a pretzel bun.

The everyday menu at Franx will also offer Chili Cheese Coney Dogs, a New York Dog and a healthier hot dog link known as the Cleaner Weiner.

A Chicken Philly Cheesesteak joins the menu at Steakadelphia, which is adjacent to Burgertopia behind section 112.

Pi Pizzeria, behind section 103, will add a new Mac and Cheese Pizza topped with hot dog slices.

The Fresh Market cart near section 103 will offer healthier and organic food options, including various salads, wraps, house-made salsas and hummus.

At Grab N Go near section 107, caramel popcorn and cheddar cheese popcorn will be new options on the menu.

Snow cones will be served in souvenir helmets this season at Sno Cone by section 113.

Homestand Specials

At Burgertopia, Franx and the ballpark’s five Dippin’ Dots carts, rotating Homestand Specials will be available each month in addition to returning favorites throughout the season.

“You assume there are only so many ways to do a hot dog, but every year we come up with six or eight more and it just keeps coming up,” Fenwick said. “Inspiration comes from everywhere.”

April

• PB&J Burger: Crunchy peanut butter, strawberry preserves, bacon and cheddar cheese top a half-pound, fresh-cut beef patty.

• Southern Comfort Dog: An all-beef hot dog topped with baked beans, bacon, coleslaw and a pickle spear.

• Bubblegum Dippin’ Dots

May

• Pastrami Burger: One-quarter pound of pastrami tops a fresh-cut beef patty along with sauerkraut and house-made COOP beer mustard.

• Mac and Cheese Dog: Creamy mac and cheese topped with green chilis, taco-seasoned beef and pico de gallo smother an all-beef hot dog.

June

• Derby Burger: A fried green tomato joins pimento cheese and bourbon onions on top of a half-pound, fresh-cut beef patty.

• Bacon Kimchi Dog: Kimchi, lime cabbage slaw and bacon top an all-beef hot dog.

• Nacho Burger: A half-pound, fresh-cut, taco-seasoned beef patty is covered with pepper jack queso, pico de gallo and crispy tortilla strips.

• Country Dog: An all-beef hot dog is topped with creamy mashed potatoes, brown gravy, bacon and sautéed onions.

• Firecracker Burger: Pepper jack cheese, jalapeños and chipotle ranch provide the pop on top of a half-pound, fresh-cut beef patty.

In the Entertainment Suites

Entertainment suites provide private indoor and outdoor spaces throughout Chickasaw Bricktown Ballpark for hosting business clients, rewarding employees or celebrating special occasions during OKC Dodgers games. Professional Sports Catering aims to provide an upscale, high-end experience for those memorable moments.

“We want to make sure we meet those expectations with food,” Fenwick said.

New menu additions in the entertainment suites this season include Party Bundles and craft beer from COOP Ale Works.

Ancho Chicken Quesadillas and Veggie Quesadillas loaded with sautéed peppers, onions, spinach and a blend of cheddar and pepper jack cheeses are new appetizers offered for 2019, as well as Street Corn Nachos, featuring fire-roasted corn queso.

A revamped Farmers Market Fruit tray, as well as a Hummus and Vegetables appetizer, have been redesigned for 2019. A Make-Your-Own Wing Toss appetizer was added to the menu with options of buffalo or barbecue sauce.

Entrée Salads are a new offering in entertainment suites, as well as Mini Porker Dogs and OKC Original Sliders.

A Popcorn Bar featuring caramel, cheddar and regular popcorn flavors is another new snack option this season, along with an appetizer of Pretzel Bites served with warm beer cheese sauce.

Continuing to Evolve

Throughout the ballpark, Fenwick aims to localize ingredients and develop as many items in-house as possible each season.

For example, salsa used throughout Chickasaw Bricktown Ballpark this season will be made fresh at the stadium, rather than purchased, as well as the COOP beer mustard introduced for 2019. Fenwick plans to grow fresh herbs at the ballpark for use in recipes throughout the season.

When determining potential menu additions for future seasons, items may be introduced during the current season to first gauge their popularity, while other flavors nearing completion may be tweaked during annual taste tests with OKC Dodgers staff.

Steps such as these all combine to create unique, high-quality and innovative food experiences for guests to Chickasaw Bricktown Ballpark all season long.

“To set us apart from other places,” Fenwick said.

Whatever you may be craving while at an OKC Dodgers game this spring and summer, the food options at Chickasaw Bricktown Ballpark will surely satisfy every taste bud.
