This sweet treat is a healthier spin of the classic English toffee — with no refined sugars, no dairy, and covered in CBD infused chocolate from @mandalachocolate! The irresistible crunch of caramelized sugar with toasty pecans and creamy stoneground dark chocolate will satisfy your sweet tooth without a crazy sugar high.

  • 1/2 cup vegan butter or margarine
  • 1 cup pecans, toasted and finely chopped
  • 1 CBD Alchemy Mandala Chocolate Bar
  • 1 cup coconut sugar

Line 8x8 baking pan with parchment paper and lightly grease the bottom and walls of the pan.

Evenly sprinkle the chopped pecans on the bottom of the pan.

Break the chocolate bar into pieces and set aside.

In a sauce pan on medium heat, bring the ½ cup of margarine and the coconut palm sugar to a boil, stirring vigorously. Add a candy thermometer and watch closely. Toffee will be ready at 285 F, around 5–7 minutes later. Be prepared to work fast!
At that point remove the pan from heat and gently (but quickly) pour over the pecans in an even layer.

After the toffee has covered the pecans, sprinkle the chocolate over the toffee and cover with a cookie sheet or piece of foil. Leave covered for ~1 minute, until chocolate begins to melt.

Use a spatula or spoon to spread the chocolate over the toffee in an even layer.

Allow to cool at room temperature for a few minutes before covering and placing in the fridge before breaking apart into bite sized pieces.
