Skillets are a fun and simple way to make a hot meal for two (or three!). You can cook some ingredients on the stovetop, then add others and bake in the oven for a final touch. Today, we’ve decided to enjoy some shakshuka, which is a hearty breakfast that feels extra special to eat, but doesn’t require all that much work to prepare!

Shakshuka is a tasty dish that has evolved over time, influenced by the flavor palates of multiple cultures. It originated in Mediterranean and Middle Eastern regions of the world, and has also become a staple in North Africa. Now it has become popular in the U.S. as a hearty breakfast that can easily serve lots of people!

Its name perfectly describes the combination of ingredients — the word “shakshuka” comes from the Arabic language, and means “a haphazard mixture” or “all mixed up.” It’s an amalgamation of rich flavor and nutrients, so it’s the perfect meal to set a tone of positivity and strength for your whole day! Best of all, it is an easy meal to make for a group so you can enjoy this nourishment with loved ones, too. 💛

CBD Superfood Shakshuka Recipe

Ingredients:

  • 1 onion, chopped
  • 1 red pepper, chopped
  • two ripe tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 tsp oregano
  • 1 tsp cayenne pepper
  • 1 tsp cumin
  • 1 tsp sage
  • 1 tsp paprika
  • salt and pepper to taste
  • 3–4 eggs
  • fresh parsley
  • CBD Superfood Ghee (1 tbsp per egg)

Directions:

  1. Preheat oven to 375˚F.
  2. In a cast iron skillet (we used an 8-inch skillet), combine onion, red pepper, and garlic on the stovetop. Sauté for about 10 minutes.
  3. Add tomatoes and spices, and mix everything together. Let simmer for about 10 minutes, or until mixture thickens.
  4. Once thickened, crack eggs on top and place skillet in the oven.
  5. Bake for 8–12 minutes, or until eggs are fully cooked. For best results, aim for a runny or soft yolk.
  6. Remove from heat. Chop up fresh parsley and sprinkle on top. Add a tbsp of CBD Superfood Ghee to each egg and let melt into mixture. Enjoy!
