Persian Chicken Salad
A great picnic weather recipe
When Gray was younger, our little family used to picnic at local parks. Sometimes, we’d just pick up a pizza and take it with. But, these outings were always more special with our own picnic fixins.
We have lots of picnic weather recipes in our house. One of our favorites is Persian Chicken Salad. It’s one of the earliest family dishes Hamid taught me. It is not a sandwich chicken salad. This salad is a whole meal in itself.
I use red potatoes because they seem to come out denser and more stable than regular white boiled potatoes. We like the taste better too. White boiled potatoes tend to go mushy and tasteless; they just don’t stand up on their own.
Our North Carolina weather reports are saying it will be picnic weather for at least the next week to ten days. So, I thought it would be a good time to share a favorite picnic recipe. Here ya go…
Persian Chicken Salad
Ingredients
- 1 whole chicken
- 4 hardboiled large eggs
- 6 medium (to smallish) red potatoes
- 1 pkg frozen peas
- 1 cup olive oil mayonnaise
