Things are progressing nicely here at Bread Ed.! We’ve moved on a bit from baguettes and are learning to shape batards, rolls, bagels, ciabatta, pan bread, three-strand braids, fendu. Scoring practice continues and I’ve even achieved a few ears here and there. The formulas are getting a bit more complex, too. My favorites so far: the francese we baked today, multigrain batards from yesterday, beautiful rye loafs, and delicious little onion poppyseed rolls at the end of this video. Who wants a sandwich?
