BLT Breakfast Casserole

The L is for leeks, not lettuce in this BLT version.

Ingredients:
12 oz bacon, cut in small pieces
2 leeks, trimmed and chopped
1 pint grape tomatoes, sliced in half
9 eggs, whipped
1 /2 cups half and half
4–6 slices sourdough bread, torn in pieces
2 cups mozzarella cheese, shredded
1 cup parmesan cheese, shredded
1 tsp dry mustard
2 tsp chili powder
1 tsp thyme
1 tsp salt
pepper

Directions:
Preheat oven to 350. Cook bacon in a saute pan until just done. Leaving, grease in pan, set the bacon aside. Cook leeks in the same pan about 5–7 minutes. Combine eggs, half and half, bread, and spices. Stir to combine. Add cheese and bacon and stir. Spray a 9X13 pan and pour in egg mixture. Top with tomatoes and parmesan cheese. Let sit for 30 minutes, then bake for 45 minutes or until cooked through.
