Bruschetta Chicken Sandwich

Well, this was supposed to be in the burger category, but it morphed into an open-face sandwich. Still delicious, though definitely not a burger.

Ingredients:
4 chicken breasts, sliced in long, thin pieces
8 oz mozzarella cheese, sliced longways
1 large loaf french bread, sliced in 1/2–1" pieces
marinara sauce
fresh basil leaves, stems removed
2 T olive oil
salt and pepper

Marinara Sauce:
1 28-oz can crushed tomatoes
1 tsp salt
1 T garlic powder

Directions:
Combine the marinara sauce ingredients and heat on low in a small pot or in the microwave. Grill chicken breasts in a grill pan with olive oil. Add salt and pepper. Butter the bread and broil on a sheet pan for 4 minutes until butter is melted, and bread is lightly charred. To the bread with the chicken and cheese and broil for another 3–4 minutes, keeping an eye on the cheese. When it is melted and starting to bubble, remove the pan. Add a spoonful of marinara sauce to the top of each chicken sandwich, and then finish with a few leaves of basil and additional cracked pepper.
