Chorizo Breakfast Casserole
The first time we tried to use Chorizo we didn’t understand how it cooks down. I think we wanted to make meatballs out of it. A breakfast casserole is a perfect place for some spicy, flavorful chorizo!
Ingredients:
6 oz chorizo, cooked and drained
8 oz pepper jack cheese, shredded
10 corn tortillas, cut in pieces
3 jalapenos, chopped
1 bunch cilantro, chopped
1 can diced green chilis, drained
1 can hominy, drained
1 pint grape tomatoes, sliced in half
8 eggs, whipped
1 1/2 cups half and half
1 tsp chili powder
1 tsp salt
pepper
Directions:
Combine all ingredients in a large bowl and mix well. Let sit 15 minutes. Spray a 9X13 pan and add the egg mixture. Bake at 350 for 45 minutes or until cooked through.
