Indian Butter Chicken Pizza

Oh I love Indian food! Butter chicken is a perfect mix of spices, so why not turn it into a delicious pizza? I happened to have some leftover, and it was a delicious addition to a great pizza night!

Ingredients:
Sauce:
1 shallot, finely chopped
1/4 white onion, chopped
2 T butter
2 tsp lemon juice
1 T ginger garlic paste
1 tsp masala
1/2 tsp chili powder
1 tsp cumin
1 1/2 cups half-and-half
2 cups tomato puree
1/4 teaspoon cayenne pepper, or to taste
salt and pepper, to taste

1 lb chicken thighs, cut into bite-size pieces
1 tsp garam masala
3 T cornstarch
3 T water
1 1/2 cups mozzarella cheese, shredded

Directions:
Heat 1 tablespoon oil in a large skillet over high heat. Saute shallot and onion until soft, about 5 minutes. Stir in butter, lemon juice, ginger-garlic paste, 1 teaspoon masala, chili powder, and cumin. Cook, stirring, for 3 minutes. Add tomato sauce, and cook for 5 minutes, stirring frequently. Stir in half-and-half. Reduce heat to low, and simmer for 10 minutes, stirring frequently. Season with salt and pepper. Mix together cornstarch and water, then stir into the sauce. Cook for 5 to 10 minutes, or until thickened. Remove from heat.

Heat 1 tablespoon oil in a large skillet over medium heat. Cook chicken until lightly browned, about 10 minutes. Reduce heat, and season with 1 tsp masala and pepper. Stir in a few spoonfuls of the sauce sauce, and simmer until liquid has reduced, and chicken is no longer pink. Cut into small pieces.

Top the pizza crust with the sauce, then sprinkle with the chicken and mozarella cheese. Bake at 500 for 10 minutes or in a pizza oven for 3 minutes.
