Orange Chicken Pizza

I made a lot of orange chicken one night, so what to do with all the leftovers? Make an orange chicken pizza!

Ingredients:
1 lb chicken thighs, cut in bite size pieces
1 cup, plus 2 T cornstarch, divided
2 large eggs, beaten

For the marinade:
1 cup chicken broth
2/3 cup freshly squeezed orange juice
1/3 cup sugar
1/3 cup white vinegar
1/4 cup soy sauce
2 cloves garlic, minced
2 T orange zest
1 tsp Sriracha, or more, to taste
1/4 tsp ground ginger
1/4 tsp pepper

1/2–2 cups mozzarella cheese, shredded
1 green onion, thinly sliced
fresh grated orange zest

Directions
Make the marinade by whisking together chicken broth, orange juice, sugar, vinegar, soy sauce, garlic, orange zest, Sriracha, ginger, and pepper in a medium bowl.

In a gallon size Ziploc bag or large bowl, combine chicken and 1/2 cup of the marinade; marinate for 20 minutes. Drain the chicken from the marinade, discarding the marinade. Heat remaining marinade in a medium pot over high heat. Bring to a boil and stir in 4 T cornstarch combined with 2 T water. Cook, stirring frequently, until thickened about 1–2 minutes; keep warm. The sauce should be quite thick.

Heat oven to 375 degrees. Working one at a time, dip the chicken into the eggs, then dredge in remaining 1 cup cornstarch, pressing to coat. Place chicken onto a sheet pan lined with parchment paper. Bake for 20 minutes or until it is 165 degrees.

Cut cooked chicken into small pieces. Spoon the sauce over the pizza dough. Top with chicken, green onions, and mozzarella cheese. Bake at 500 degrees for 10 minutes, or in a pizza oven for 3 minutes.
