Tex-Mex Minestrone

I love a good minestrone and I also love Mexican food. It seems like a lot of my recipes are combining favorite flavors with a favorite kind of food: so a Mexican minestrone soup. Don’t forget the hominy! That’s the best part!

Ingredients:
2 bell peppers, diced
1/2 onion, diced
2 yellow squash, diced
1 large can hominy, drained
1 large can diced tomatoes
2 cups corn kernels
2 cups black beans
1 cup large red kidney beans
8 cups chicken bouillon
2 tsp cumin
2 tsp salt
1/2 tsp pepper
1/2 tsp chili powder

Directions:
Prepare vegetables. Saute onion for 5 minutes in a large stock pot. Add the remaining vegetables and cook for 3 minutes. Add all the remaining ingredients. Bring to a boil and simmer for 20 minutes or until vegetables are soft. Top with taco sauce, tortilla chips, and cilantro.
