Tomatillo Chicken Tacos

A homemade salsa. Chicken thighs. Feta. Sauted veggies. All in a taco. Um…yum.

Ingredients:
5 boneless, skinless chicken thighs, cut in bite sized pieces

Toppings:
Salsa (recipe below)
Feta cheese, crumbled
Cilantro, chopped
1 red bell pepper
1 summer squash
1/2 red onion

Salsa:
4 tomatoes, quartered
4 tomatillos, quartered
1 bunch cilantro
3/4 cup onion, quartered
1 jalapeno, sliced big with seeds left in
3 cloves garlic
1 tsp salt, more if necessary
1/4 cup water (if needed)

Corn tortillas (homemade preferable!)

Directions:
Prepare salsa ingredients and blend well in a blender or food processor. Saute chicken in 1/3 cup salsa until cooked through. Set aside. Saute bell pepper, squash, and red onion until cooked well. Season with salt. Prepare tacos with desired toppings.
