Spinach Feta Burger

Savannah loves hamburgers! So I wanted to create a delicious burger that both she and I would love. This one is a good mix of tangy from the feta, fresh from the spinach, and hearty from the beef. It turned out well and everyone enjoyed it (except Jackie, who doesn’t like meat).

Ingredients:
1/2 block feta, crumbled
1 lb ground beef
salt and pepper

Roasted Red Pepper Aioli:
1 roasted red pepper
2 T garlic paste
1/2 cup mayo (more if needed to thicken)
1/2 jar green olives with pimentos
3 T dijon mustard
1/2 tsp salt
2 T olive oil
1/8 tsp crushed red pepper

Toppings:
tomato, sliced
fresh spinach leaves
Aioli sauce

Directions:
In a food processor, blend all ingredients for the Aioli and allow to sit while you prepare the hamburgers. Combine feta, beef, salt and pepper. Divine into 4 patties. Heat griddle or barbecue. Cook burgers for 4 minutes, then flip and cook until desired doneness. Underneath the burger, lay a bed of spinach on the bottom bun. Then top the burger with tomato and the Aioli and a toasted top bun.
