Zucchini Parmesan

There are so many ways to prepare zucchini, and fried is definitely one of the best! Topped with a homemade sauce, and it will always be a favorite!

Ingredients:
2 medium zucchini, sliced longways on mandolin
1 1/2 cups panko breadcrumbs
1 1/4 cups parmesan, divided
1 tsp basil
1 tsp garlic
1 tsp oregano
1 tsp salt
1/4 tsp fresh cracked pepper
3 eggs
16 oz bowtie, spaghetti, or other favorite pasta

Marinara Sauce:
1 large can crushed tomatoes
1 T garlic
1 tsp salt
1 tsp basil
1 tsp oregano
1/4 tsp pepper
1/4 cup parmesan, shredded

Directions:
Whisk the eggs in a shallow bowl. Combine parmesan, breadcrumbs, and spices in another shallow bowl. Dredge sliced zucchini in eggs, then breadcrumb mixture. Heat enough oil in a skillet to deep fry the zucchini. When the oil is hot, fry zucchini for 2 minutes each side. Place is baking pan (sprayed on bottom) and add 1/4 cup extra parmesan to the tops of each zucchini. Broil 5 minutes.

Meanwhile, place noodles, a pinch of salt, and enough cold water to cover the pasta in a pot and bring to a boil. Boil until al dente, about 8 minutes.

Prepare marinara sauce by combining all ingredients and heating over medium heat.

Serve pasta topped with zucchini and sauce. Add extra parmesan if desired.
