Eating Green with Chef Jordan Wagman — Episode 2 — Blueberry Fruit Leather

Welcome to Eating Green, a cooking show hosted by Chef Jordan Wagman where we redefine Cannabis infused food. Our goal is to teach everyone how to make infused and non infused food using very few ingredients.

Today Chef Jordan Wagman will be making one of his favorite snacks and it couldn’t be easier to make! Infused Blueberry Fruit Leather/Rollups. Enjoy!

What you’ll need:
Parchment paper lined baking sheet
2 cups (500 mL) blueberries
3 tbsp (45 mL) maple syrup
1 tsp (5 mL) cannabis oil
¼ tsp (1 mL) peppermint oil (optional)

Preheat oven to 200 F (see tips)

In a medium sauce pan with a tight fitting lid, combine blueberries and maple syrup.Bring to a simmer and cook until blueberries skins split and liquid coverers berries, about 10 minutes.

Remove from heat, strain mixture over a bowl and cool to room temperature.

Transfer strained blueberries to a blender, add cannabis and peppermint oil and puree until smooth.

Evenly spread mixture over parchment paper lined baking sheet and transfer to a pre-heated oven until firm, about 2 hours. Remove from heat and cool to room temperature.

Serve immediately or store in an air-tight container for up to eight weeks.

Chef Jordan’s Tips — I prefer using a dehydrator but it is not absolutely necessary. If using a dehydrator cook at 95F for 12 hours.
