Pairing the right foods is one of the best ways to increase the nutrient value of your meals
Before I became a vegan, I was worried that I would not be able to get the right amount of nutrients from my diet.
I was trying to work it out in my head, given that beans and legumes gave me intestinal problems in the past, and I assumed (without researching, mind you) that my gut was and will continue to be sensitive.
First, I had to understand the proper cooking methods to help me digest and absorb the nutrients in legumes and continually eat them so that my gut could become accustomed to the extra fibre and gut-healthy food.
Getting to a gut-happy place with legumes took a little time and patience.
