Chef Cidney’s No Bake Sweet Potato Cheesecake

Ingredients
- 2–8oz blocks of cream cheese
- 14oz can of sweetened condensed milk
- 2 cups sweet potato (canned or fresh)
- chopped pecans (optional)
- 2 cups of graham cracker crumbs
- 2 tbs melted butter
Instructions
- Cream together the cream cheese, sweetened condensed milk and sweet potato in food processor, set aside
- In a bowl, combine graham cracker crumbs and butter until slightly moist
- In small individual serving bowls, place a layer of crumbs then cream cheese mixture.
- Top with chopped pecans (optional)

You can also purchase individual graham cracker pie crusts instead of making your own, to save time
