Chef Cidney’s No Bake Sweet Potato Cheesecake

Ingredients

  • 2–8oz blocks of cream cheese
  • 14oz can of sweetened condensed milk
  • 2 cups sweet potato (canned or fresh)
  • chopped pecans (optional)
  • 2 cups of graham cracker crumbs
  • 2 tbs melted butter

Instructions

  1. Cream together the cream cheese, sweetened condensed milk and sweet potato in food processor, set aside
  2. In a bowl, combine graham cracker crumbs and butter until slightly moist
  3. In small individual serving bowls, place a layer of crumbs then cream cheese mixture.
  4. Top with chopped pecans (optional)

Notes

You can also purchase individual graham cracker pie crusts instead of making your own, to save time
