Classic Avocado Toast

Ingredients:

  • ½ ripe avocado
  • 1 Tablespoon olive oil
  • ½ teaspoon lemon juice
  • 2 slices whole grain/whole wheat bread
  • Salt and pepper to taste

Optional Toppings:

  • Egg, herbs, garlic, balsamic vinegar, hot sauce, onions, tomatoes, jalapeno, red pepper flakes, flakey salt, etc.

Preparation:

  • Place pieces of bread in a toaster
  • In a small bowl, mash the avocado with a fork until desired consistency and mix in lemon juice—season with salt and pepper to taste.
  • Drizzle toast lightly with olive oil and divide ½ the avocado mixture between each slice of toast.
  • Add any additional toppings and enjoy!

Serves 2, makes 2 slices of toast
