The Best Healthy Banana Muffins

Every time I have brown bananas laying around the house I make these amazing muffins! They are so easy to make and absolutely delicious!

Ingredients:

  • 3 large ripe bananas
  • ⅓ cup neutral oil (coconut, grapeseed, vegetable, etc)
  • ½ cup maple syrup
  • 1 egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon, ground
  • ½ teaspoon salt
  • A pinch of cloves
  • A pinch of ground ginger
  • 1 cup Chocolate chips (optional)

Preparation:

  • Preheat your oven to 450°F (232°C).
  • Whisk together all the dry ingredients, flour, baking powder, baking soda, cinnamon, salt, cloves, and ginger in a medium-sized mixing bowl.
  • In a larger bowl, mash bananas with a fork until fairly smooth.
  • Add oil, maple syrup, egg, and vanilla to the mashed bananas and mix well.
  • Add dry ingredients to the banana mixture and mix until fully combined. Be careful to not overmix.
  • At this point, fold in chocolate chips, if adding.
  • With an ice cream scoop or spoon, scoop the batter evenly into the muffin tin (greased or lined with muffin liners). You should have 12 muffins.
  • Bake at 450°F (232°C) for 5 minutes and immediately put down the temperature to 350°F (176°C).
  • Bake at 350°F (176°C) for 15 minutes or until a toothpick comes out clean.
  • Let muffins cool for 5–10 minutes.
  • Enjoy!
