The Best Healthy Banana Muffins

Every time I have brown bananas laying around the house I make these amazing muffins! They are so easy to make and absolutely delicious!
Ingredients:
- 3 large ripe bananas
- ⅓ cup neutral oil (coconut, grapeseed, vegetable, etc)
- ½ cup maple syrup
- 1 egg, room temperature
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon, ground
- ½ teaspoon salt
- A pinch of cloves
- A pinch of ground ginger
- 1 cup Chocolate chips (optional)
Preparation:
- Preheat your oven to 450°F (232°C).
- Whisk together all the dry ingredients, flour, baking powder, baking soda, cinnamon, salt, cloves, and ginger in a medium-sized mixing bowl.
- In a larger bowl, mash bananas with a fork until fairly smooth.
- Add oil, maple syrup, egg, and vanilla to the mashed bananas and mix well.
- Add dry ingredients to the banana mixture and mix until fully combined. Be careful to not overmix.
- At this point, fold in chocolate chips, if adding.
- With an ice cream scoop or spoon, scoop the batter evenly into the muffin tin (greased or lined with muffin liners). You should have 12 muffins.
- Bake at 450°F (232°C) for 5 minutes and immediately put down the temperature to 350°F (176°C).
- Bake at 350°F (176°C) for 15 minutes or until a toothpick comes out clean.
- Let muffins cool for 5–10 minutes.
- Enjoy!
