In 2016, the last commercial sugar cane crop was harvested on Maui. Sugar cane has a long tradition in the islands, and much of modern Hawaii owes its nature to the Sugar industry. If you’re interested in the history of Sugar in Hawaii, there’s no better place to go than Carol MacLennan’s Sovereign Sugar.

I’ve been messing with Sugar Cane as a cocktail ingredient recently. If you want to know how to deal with it (crush it, get the juice), there’s more here.

In honor of the last Sugar Cane cocktail, we offer The Last Harvest. The soy sauce gives it a bit of bitterness….

The Last Harvest

Ingredients

  • 2 oz rum
  • 2 oz fresh squeezed sugar cane juice
  • 5 drops soy sauce
  • 2 splashes lemon juice

Instructions

  1. Shake all in cocktail shaker. Pour into a martini glass. Drop a chunk of pineapple into the drink.
