I decided to devote my life to reviving the art of spice blending. At La Boîte, we use more than 120 carefully selected spices from all over the world. To make a great blend, I start with one or two main components and bring others in to create balance. I’m starting to use coffee as an ingredient; I like the color and aroma it adds to my blends. But what I like most about coffee is drinking it. I have a lot of respect for what illy does in terms of blending, because it’s very challenging to get the same consistency over and over again. It’s smooth and you can enjoy the last sip just as much as you enjoyed the first.
