Bonus Recipe #11: Chocolate Zucchini Muffins
A Happy Pick-Me-Up

I opened my washing machine to find that all of my white clothes had turned a pretty shade of pink. As I groaned, I reached in to find my beautiful deep red scarf maliciously laying among the soft color. GREAT.
At least dinner was almost ready. The instructions said 14–17 minutes on our frozen pizza (yep, I took a shortcut). I looked in at 12 minutes to find it quickly turning a charred black on the sides. BURNT.
Tears began to flow. Aaron walked over and held me in my tears.
I said, “I can’t do anything right!”
He reassured me that what I said simply was not true. That I was the superwoman of laundry and a phenomenal cook (thanks, dude).
In the midst of my tears, I realized that there are still many things to be joyful about. One of which are these Chocolate Zucchini Muffins that I made to redeem myself from my treacherous mistakes.
Here is the recipe that made our night a little sweeter. Enjoy.
What You’ll Need
- 2 Eggs
- Olive Oil (1/2 Cup)
- Sugar* (1/2 Cup)
- Brown Sugar (1/2 Cup)
- Vanilla (2 teaspoons)
- Zucchini, grated (1 1/2 Cup)
- Flour** (1 1/2 Cup)
- Cocoa (1/2 Cup)
- Baking Soda (1/2 teaspoon)
- Baking Powder (1 teaspoon)
- Salt (1 teaspoon)
- Mini Chocolate Chips (1 Cup — or more if you feel inclined)
*We used Coconut Sugar — simply because we had it in our cupboard
**Because of dietary needs, we used Bob’s Mill Gluten Free Flour
How We Did I
- Preheat oven to 350 degrees
- Place muffin/cupcake cups in muffin/cupcake tin.
- Grate zucchini into a measuring cup or bowl (leave out skin and just use the inside for this recipe).

- Combine eggs, olive oil, sugar (both coconut and brown), and vanilla in a large bowl and mix well.
- Slowly add grated zucchini and stir well.
- Combine all dry ingredients in a separate bowl and slowly add it into wet ingredients.
- Add in chocolate chips and mix well.
- Spoon mixture into muffin cups.
- Sprinkle more chocolate chips on top if you so desire.
- Bake for 22–25 minutes.
- Take out of the oven, cool, and enjoy!
