Recipe 41: Avocado Burger on Rice

This is one of the many recipes that Aaron and I want to share with you. We are overjoyed for you to come with us on our journey as we put together different concoctions and laugh together (all while hoping to not burn our apartment down). What You’ll Need
- Ground Turkey Burger
- Avocado
- Grape Tomatoes
- Onion
- Lime or Lemon Juice
- Rice
- Optional: Sriracha
- Skillet
How We Did It
For Burgers
- Dice onion and mix together with ground turkey burger.
- Shape into 4–5 inch burgers.
- Heat skillet on medium heat and place burgers on skillet (be sure not to overcrowd the pan).
- Cook turkey for approx. 6 minutes on each side.
For Avocado Spread
- While burgers are cooking, slice tomatoes and set aside.
- Mash up avocados and add tomatoes in (add 1/4 teaspoon of lime/lemon juice to keep fresh).
- Place in fridge to chill.
For Rice
- Make rice according to packaging. Rice cookers work great for easy prep or steamable rice is a quick and easy way to make it!
For Serving
- Lay rice out on a plate.
- Place a turkey burger on top of rice.
- Add avocado spread on top of burger.
- For even more taste, add leftover onions on top of avocado spread.
