Week 93: Breakfast Quesadillas

Each Sunday, my wife and I cook and eat a meal together — intentionally. Every Friday, I’ll be sharing our experience here in this space. I want to see the growth that will come in our marriage because of this. I hope you enjoy our story. You can find last week’s post here.

Every year on the first weekend in December, the women in Sarah’s family get together for a craft show. It’s a big deal in her family, and they all have so much fun with it.

Personally, one of my favorite parts is that every year Sarah gets summer sausage from one of the vendors, and it is sooooooo good. Usually we just eat the summer sausage plain, but this year we decided to cook with it.

We had some things going on later that day, so we decided to make breakfast — breakfast quesadillas in fact!

Sarah scrambled some eggs while I chopped up the sausage. Finally, when all was ready, we grabbed some tortillas and started to cook all of it in the skillet.

Quickly, we realized there’d be a problem.

The quesadillas were quite large in the skillet, and we needed some way to flip them. We let the quesadillas cook a little longer so that they wouldn’t fall apart as easily. But, at some point, we’d have to face the problem of how to flip them.

If you’re like me at all, problems on the horizon can eat up large swaths of your mind. I think about and pore over them. Growing up in the church, I had heard two key verses about worry my entire life. But, to be honest, I rarely listened to what they had to say.

Do not be anxious about anything, but in every situation, by prayer and petition, with thanksgiving, present your requests to God. — Philippians 4:6

Casting all your care upon him; for he careth for you. — I Peter 5:7

In college, I began to consider a powerful question — what if these Bible verses mean what they say? What if I don’t have to worry all the time? What if I can truly give the weight of those worries to God?

I’m still not perfect at it, but I’m growing. The fact of the matter is that difficult situations are bound to come our way. We need to figure out what to do in light of that. It’s ok to not have it all figured out. Who among us really does anyways?

The moment of truth came, and I went for the flip. Cheese, eggs and sausage began to spill out. Sarah and I gave each other some side eye. But, you know what? We learned from it. In the other skillet, we flipped the other quesadilla. Not as much spilled out this time!

We cooked them a little longer, then it was time to eat. And eat we did! These were so good. That sausage was the perfect addition.

Problems will pop up. Some of the ingredients of life don’t always stay where they should. But Sarah and I have learned that facing problems together and praying through them are the way to go. It doesn’t change the fact that problems will come, but it does help us get through them with smiles on our faces and tasty food in our bellies.
