And what if it is a recipe from Le Creuset?

It’s a Tuesday and just me and my second munchkin so we went simple. Rei does some house-helper work — laundry and stuff like that — for one of our friends on Tuesdays and doesn’t get home until 6:30 PM.

And this means Rei isn’t available to help me cook on Tuesdays.

Yesterday as I was sharing out the last two dinner posts, I saw a root vegetable coconut curry soup in a Le Creuset ad on Twitter and decided to give it a try.

Zeke made a grocery run this morning after taking Rei to school to pick up some butternut squash, coconut cream, and the coconut sugar. And maybe the limes. We had the rest including the homemade chicken stock from last week. Where else would we have gotten the limes from? They’re not something you can just pull out of your asssssssset management file…(Rei, we could have a lime tree~Terri)

I prepped everything and got the onions sautéed before adding the garlic. Then it was the rest of the vegetables and the spices. It smelled amazing with the turmeric, curry powder, and red chile pepper flakes. Yum. I wasn’t home for this and now I’m jealous. Spoiler alert, the soup was really tasty.

It didn’t take long to get those cooked up a little bit before adding the coconut cream and chicken stock. I think I added the rice wine vinegar too. Then it was up to a boil and then back down to a simmer for about 40 minutes. I had work to do so I think I let it go a while longer.

Once the veggies were soft, it was time for the peanut butter, rice wine vinegar, and the lime juice and then the immersion blender. That took about two minutes and then it was ready to serve. I just had to wait for Rei to get home and pull the salad together.

I topped the soup off with some more peanut butter (I didn’t have peanuts) and some pumpkin seeds (didn’t have peanuts) and some whipping cream (didn’t want to open another can of coconut cream). It ended up being pretty good. Rei said we could make it again. I gave this meal the sea lion of my approval.

We opted for arugula, strawberry, goat cheese, and a vinaigrette yet again. And then Rei asked what our protein was. Oops! Didn’t think about that. There’s protein in the goat cheese, pumpkin seeds, and chicken stock. We had quiche for breakfast and I had a hummus snack so I think we will be fine. No, if I don’ get protein in every single meal without fail, I will die of malnutrition. That’s why I always loved our breakfast-for-dinner meals when I was younger — there’s so much nutritional value in cereal. (That was sarcasm, for the record. We will survive.) (Cereal? Who fed you cereal for dinner?~Terri)

And now Rei is doing homework and I am waiting for them to finish. Today is international or national bake cookies at home day and their French teacher gave them a chocolate shortbread cookie we are hoping to make tonight. I think there’s chilling involved so it’s not looking good.

Rei? What do you think?

I don’t think the cookies will be done tonight (although I may start the dough if we have everything). Does it count as French cooking if my French teacher recommended the recipe to me? I vote yes.

I do have other stuff to do tonight, though. Very important stuff like shine my boots (they’ve gotten very scuffed-up) and paint my nails (there’s more nail showing than covered at this point).

Mom is asking if I’m done yet. I’m typing more just to spite her at this point, to be honest (insert laughing/crying emoji here). It’s barely 8:00 pm! (Rei, it’s been a long day, month, year…~Terri)

Anyways, I’m going to go do stuff because I want to do it, and I will let Mom go through this one more time to make sure I don’t say bad words like fuck too many times or spill any state secrets like that one time last May. Wild times, man, wild times.
