Tonight I made chicken pesto (/chimichurri) with rice and zucchini.

Let’s just say it was delicious. The chicken was simply broiled, in a lil’ homemade pesto-chimichurri served over rice and aside zucchini. This simple dish makes a perfect amount of food for my family and leaves us feeling satisfied and happy that we ate this healthy-ish dish. I’ll leave some ideas for pesto below and in the recipe archive.

Blend basil, spinach, garlic, rice wine vinegar, salt, pepper and any other favorites (lemon, cumin, etc.) together in a blender, to taste. Add olive oil in a steady stream with the blender running until emulsified and continue to blend until no garlic chunks remain. Serve with a protein like chicken, steamed veg, and rice.
