The Best Spinach Recipe

My partner once hated spinach, and I have converted him to the cult of fresh cooked spinach. You are also welcome to join.
Ingredients
- Three handfuls of cut fresh spinach
- Two handful of cut fresh basil
- Diced garlic (3 cloves)
- Thinly sliced onions, about 1/4 C
- One whole lemon, cut into halves
- Johnny’s Fine Seasoning Salt (not optional)
- Black Pepper (to taste)
- Fennel Seed (2–3 TB or to taste)
- Extra Virgin Olive Oil
- Goat Cheese (optional)
Methodology
If you have a dutch oven for this, use it, otherwise get a big ### saucepan. Remember if you are cooking a dinner, this should be cooked last since it takes about two minutes. Note: There is no substitute for Johnny’s Seasoning Salt.
- Put the heat of your stove burner on medium, add about 2 TB of olive oil
- Add the Garlic, Onion, Black Pepper, and Johnny’ and squeeze one half of the lemon.
- Sautee those ingredients until you can smell the onions are carmelizing in the pan
- Add the spinache and basil in layers, spinach, basil, spinach, etc
