One thing about living alone as an older gent is that even though I enjoy cooking, I don’t enjoy cooking for one person.

Creating a mess in the kitchen, slicing and dicing, all that prep work — it’s just not much fun when I’m the only guest.

Luckily, there’s astronaut food.

“What is astronaut food?” the inquisitive reader wants to know.

In my little world, astronaut food is anything that comes in an envelope that can help you create something almost resembling something tasty and that doesn’t go bad if you keep it in the pantry for a year.

The food industry has come a long way since the days when ramen noodles had to satisfy the urge for a quick, salty delicacy. These days, you can whip up something different every night.

Most of it is a sodium nightmare, like all packaged foods, but if you can take the sodium hit without your doctor permanently withdrawing her services from you, it’s worth a look.

I’ll give you a brief overview of some varieties of astronaut food and how you can make a reasonably interesting meal in a few minutes, whether from scratch (sort of) or as a way to extend leftovers.
