India is a country famous for its festivals and the food that comes along with the celebrations. Here we've brought to you a simple yet delicious sweet that's a favorite of ours, the humble malpua.

Prep time: 5 min

Cook time: 20 min

Servings: 15 malpuas

Ingredients for malpua :

· 1¼ cup Maida

· 3 green cardamoms (elaichi)

· 1 teaspoon Fennel seeds

· 1½ cup milk

· 4 tablespoon ghee or oil as per preference

For sugar syrup:

· ½ cup sugar

· ¼ cup of water

· 1 teaspoon Lemon juice

Method:

Making the batter-

1. Pour milk in the mixing bowl.

2. Add maida, crushed cardamom, and fennel seeds to the bowl.

3. Mix everything well to make a batter of flowing consistency, use a whisk if needed. You can alter milk amount to alter the batter consistency to make thick or thin malpuas.

4. Beat the batter for 3 to 5 minutes to make fluffy malpuas.

5. Keep the batter aside till you prepare the sugar syrup. Let it rest.

Making the Sugar syrup :

1. Add water and sugar in a pot.

2. Dissolve the sugar on medium flame.

3. Boil the syrup until it reaches 1 string consistency.

4. Now add 1 teaspoon of lemon juice to syrup to avoid crystallization and boil 4 cups of water in a larger pot and put sugar syrup in the water bath.

Making the malpua:

1. Take a pan and heat ghee or oil in it as per your preference for frying malpuas.

2. When the liquid is hot add 50 ml or one little scoop of batter in pan.

3. Allow it to fry till it gets a golden brown color and then flip it and let it fry till it gets golden brown on the other side.

4. Remove it from the pan and add it directly to the sugar syrup.

5. Let it soak in sugar syrup for a few minutes.

6. If the sugar syrup starts crystallizing add a little amount of water and heat it.

7. Now you can garnish your malpuas with chopped almonds, cashews and pistas. You can serve your delicious malpuas with rabdi or condensed milk as per your likes.

Additional tip:

You can add orange juice instead of milk to make orange malpuas or add banana or vanilla essence to batter according to your taste preferences.

You can serve it with strawberry jam too.
