Course- Snacks

Prep time- 30 min

Cook time- 15 min

Serves- 8–9 cones

Ingredients:

For Cone

  • 0.5 tablespoon dry active yeast
  • 1 tablespoon sugar
  • 1 cup of warm water
  • 2.5 cups all-purpose flour (maida)
  • 0.5 tablespoon salt
  • 1.5 tablespoons olive oil
  • 8 cone baking mold (or could be made with coned cardboard with aluminum foil covering) and cone holders
  • ½ cup Melted butter

For Filling

  • ¼ cup Red capsicum cut into ½ inch pieces
  • ¼ cup Yellow capsicum cut into ½ inch pieces
  • ¼ cup Green capsicum cut into ½ inch pieces
  • ½ cup Tomatoes cut into ½ inch pieces
  • ½ cup boiled Sweet corn
  • ½ cup Onions
  • ½ cup Pizza sauce/ Tomato sauce
  • ½ tablespoon seasoning (oregano, black pepper, thyme, basil, etc.)
  • 200g Mozzarella cheese

Method:

For Dough

  • Mix sugar and salt in warm water (about 40–50 deg C) and then add yeast.
  • Wait for 8–10 min for the yeast to bloom up; if no bubbles arise start afresh or change the yeast packing.
  • Next, add flour, olive oil and knead until the dough is smooth.
  • Oil the dough on all sides, cover the dough with a moist cloth and keep it for an hour to rise.

For Cone

  • Sprinkle flour on the surface and take about ¼ dough at a time and roll it to about ¼ inch thick.
  • Now cut strips of about 1-inch length starting from one end.
  • Wrap these strips on molds to form cones.
  • Repeat the process with the rest of the dough.
  • Let the cones rest for about ½ hour before baking.
  • Brush melted butter on the outer side of the cone
  • Meanwhile preheat the oven to 400 F for 5 minutes and then add the cones for about 7–8 minutes till the cone starts turning golden brown. (Don’t bake them completely at this step as it will be baked again with filling) .
  • Now carefully take the cones out for the filling.

For Filling

  • Mix capsicums, tomato, sweet corn and onion with pizza sauce and seasoning in a bowl and mix about 50 g of grated cheese in it.
  • Fill this in cones leaving space for some cheese on top.
  • Add the cheese on top, place the cones onto holders and place them back into the oven for 4–5 minutes or till the cones turn brown.
  • Take out the cones and serve them with a garnish of seasoning on top.
