Salmon cakes

Salmon is one of the nutritious food rich in omega 3, protein, potassium, B-vitamins, selenium, and the antioxidant astaxanthin. It is known to be beneficial in reducing heart disease, fight inflammation, enhance brain health, and delicious!

Ingredients

  • 1 pound wild-caught salmon
  • 1/3 cup olive oil
  • 1/3 cup lemon juice
  • 2 onions diced
  • 1 red bell pepper diced
  • 2 stalks celery diced
  • 2 garlic cloves minced
  • ½ spoon ginger minced
  • 1 cup almond flour
  • 4 large eggs, beaten ( organic preferably)
  • 4 TBSP avocado mayonnaise
  • 2 TBSP Dijon mustard
  • 1 tsp paprika
  • ½ spoon turmeric
  • 2/3 cup fresh parsley, finely chopped
  • 4 TBSP fresh dill, finely chopped
  • 1 tsp Himalayan salt
  • ¼ tsp finely ground black pepper
  • Olive oil or coconut oil to cook the salmon cakes

Instructions:

Preheat the oven to 425 degrees F.

Marinade the salmon for an hour in olive oil, lemon juice, paprika, pepper and salt

Bake the marinated salmon in preheated oven for 10–13 minutes, or until it flakes with a fork. Remove from the oven and let it cool.

Sauté the onion for a minute, after that add in garlic, ginger, peppers, turmeric, and celery, saute until it becomes translucent.

Take off the skin from the cooked salmon when it cools down and place it in a bowl. Add the chopped parsley, dill, mayonnaise, almond flour, eggs, and sautéed veggies. Mix well.

Form the mixture into small patties with your hands.

Heat the olive or coconut oil in a skillet and cook the salmon cakes until brown on both sides. Remove and place on a paper towel-lined plate. Alternatively, you can oven bake them on a cookie sheet at 400 degrees F for 10–12 minutes on each side.

Serve with the Dill Dressing and a side of vegetables. You can freeze leftover salmon cakes for later.

Dill Mayonnaise Dressing

Ingredients:

  • 1/4 cup avocado mayonnaise
  • 2 TBSP fresh dill, finely chopped
  • 1/2 tsp lemon juice
  • 1/3 spoon Lemon zest
  • Himalayan salt ( to taste)
  • ¼ tsp finely ground black pepper ( or according to taste)

Mix all these ingredients and serve it with salmon cakes
