Broccolini

Broccolini is a nutritious, fiber-rich vegetable that contains vitamins, folate, vitamin C, A, iron, potassium, magnesium, and calcium among other nutrients. It belongs to the cruciferous vegetable family. It is known to be good in reducing blood pressure and diabetes management, bolstering immunity, skin health, and reducing inflammation. It also aids the liver detoxification, which helps to maintain a good hormone balance.

Ingredients

  • 2 large bunches broccolini
  • 2 tablespoons Coconut aminos
  • 2 tablespoon minced garlic
  • 1–2 tablespoon pepper
  • 3 tablespoon olive oil
  • Salt to taste

Preparation

  1. Preheat oven to 400 F . Spray a large baking sheet with olive oil.
  2. In a bowl, mix all the ingredients — coconut aminos, garlic, pepper, olive oil, and salt according to taste.
  3. Wash and pat dry broccolini. Place it on the baking sheet in a row. Drizzle with the spice mixture (spread it evenly)
  4. Roast for 15–20 minutes until it turns soft. If you like it crunchy you may have to bake it for 5 more minutes. Serve it hot.
