2 Tasty, Vegan Recipes with Fresh Green Peas

The Winter season adds various types of vegetables in our plate. Fresh green peas or garden peas or matar (in Hindi) is one of them. It is a small spherical seed of the pod fruit Pisum sativum which contains several seeds. It is packed with nutrients like protein, fiber, Vitamin A, K and C, thiamine, folate, etc.

Peas can be cooked with nearly every other winter vegetable like cauliflower, cabbage, carrot, potatoes, and green fenugreek leaves. It can also be used as a tasty snack at tea-time.

There are various delicious dishes of peas like matar pulao (peas and rice), gobhi-aaloo matar (cauliflower, potato, and peas), matar paneer (peas with Indian cheese), methi matar malai (peas with fenugreek), matar ki kachori (bread made with peas), matar fry (fried peas), and matar ka nimona (green peas curry), etc.

Ingredients:

  • Peas: 2 cups (roughly grounded)
  • Potato: 1 medium size (optional)
  • Green chili: 1 (chopped)
  • Tomatoes: 1 (blended)
  • Ginger-garlic paste: 1/2 teaspoon
  • Refined oil/Mustard oil: 2 teaspoons
  • Cumin seeds: 1 teaspoon
  • Asafoetida: a pinch of
  • Black Cardamom: 1
  • Black pepper: 3–4
  • Bay leaf: 1
  • Starflower: 1 petal
  • Clove: 1
  • Cinnamon stick: 1’ inch
  • Turmeric powder: ½ teaspoon
  • Chili powder: 1/3 teaspoon
  • Coriander powder: ½ teaspoon
  • Salt: according to taste

Preparation:

  • Add oil to a pre-heated pan
  • Peel and cut the potato into a small square and clean it with water
  • Fry the potato pieces and keep them aside
  • Now add cumin seeds, asafoetida, black cardamom, clove, starflower petal, black pepper, green chili, cinnamon stick
  • Add tomato and ginger-garlic paste and stir it
  • Now add turmeric powder, chili powder, coriander powder
  • Roast it for a minute
  • Add peas to it and stir
  • Pour one cup of water to make gravy thin
  • Add fried potatoes, salt and cook for 5 minutes on a low flame
  • Garnish with green coriander leaves

Ingredients:

  • Peas: 2.5 cups
  • Green chili: 1 (chopped)
  • Ginger: 1’ inch (chopped)
  • Oil: 2 teaspoons
  • Cumin Seeds: ½ teaspoon
  • Asafoetida: a pinch of
  • Salt: According to taste
  • Turmeric powder: ½ teaspoon
  • Garam masala: 1/3 teaspoon
  • Red chili: 1/3 teaspoon
  • Cumin powder: ½ teaspoon

Preparation:

  • Add oil in a preheated pan
  • Now add cumin seeds, asafoetida, green chili, and ginger and saute
  • Add peas, salt, and spices to it and saute further
  • Cook it in a low flame for 3 minutes
  • Garnish it with green coriander leaves and few drops of fresh lemon juice
  • Serve it with cilantro sauce

Note: you can eat it as a snack or grind it to use as a stuffing for various Indian breads like parathas or kachori.
