Mushroom Recipes for the Winters!

Mushrooms are regarded as nature’s hidden treasure or a wonderful gift. They are packed with vitamins and are very low in calories. They are known for being a rich source of potassium and selenium, two key metals needed for the healthy functioning of our body.

Mushroom is usually cultivated by local farmers. I tend to purchase it from my local vendors. For us, it is only available in winters.

Mushrooms are versatile and can be used in a variety of recipes. These include mushroom rice, mushroom crostini, stuffed mushroom, mushroom korma, fried mushroom, etc. Here I am going to share some mushroom recipes from my mother’s diary.

Peas with Mushroom

Ingredients:

  • Button mushroom: 200 gm
  • Peas: ½ cup
  • Onion: 1 medium size (finely chopped)
  • Ginger: 1 inch
  • Green chili: 1 (chopped)
  • Tomato: 1 medium-sized (finely chopped)
  • Black cardamom: 1
  • Bay leaf: 1
  • Clove 1–2
  • Black pepper: 3–4
  • Star Anise: 1 petal
  • Cinnamon stick: 1 inch
  • Refined oil: 2 teaspoons
  • Salt: according to taste
  • Turmeric: ½ teaspoon
  • Chili powder: ¼ teaspoon
  • Garam masala: 1/3 teaspoon

Preparation:

  • Add oil to a preheated pan
  • Add black cardamom, cinnamon stick, black pepper, clove, bay leaf, and star anise to the pan
  • Saute for a minute
  • Now add the onion and the green chili
  • Cook till it turns transparent
  • Add tomatoes, peas, mushroom, and other spices to it
  • Cover the pan with a lid and cook for 5 minutes on a low flame
  • Open the lid and saute it for few minutes
  • Garnish it with coriander leaf

Mushroom Soup

Ingredients:

  • Mushroom: 200 gm
  • Onion: 1 small (finely chopped)
  • Ginger: 1 inch (finely chopped)
  • Garlic: 4–5 cloves (finely chopped)
  • Butter: 2 teaspoons
  • Cream: 1 spoon
  • Salt: according to taste
  • Bay leaf: 1
  • Fresh black pepper powder: ¼ teaspoon

Preparation:

  • Add butter to a preheated pan
  • Add bay leaf, onion, ginger, and garlic to the pan
  • Saute and cook till transparent or golden brown
  • Now add the mushroom and salt to the pan
  • Cook for 5 minutes
  • Now add 2 cups of water and cook it for another 5 minutes
  • Add cream and black pepper and serve it hot
