Ingredients

8 ounces (about 1 packed cup) Chopped Dates
1 cup Honey
1 Tablespoon Ground Flax Seeds
Pinch of Salt
3 servings Daily Lift® Mixed Berry supplement
1 1/2 cups Old-Fashioned Oats (dry, not cooked)
1 cup Shelled Pistachio Nuts
1 cup Dried Cranberries

Directions

Start out by chopping your dates. I chopped mine into quarters so they would process easier in the food processor. Next, combine the chopped dates, 1 cup honey, 1 tbsp flax seeds, a pinch of salt and 3 servings of Daily Lift® Mixed Berry supplement in a food processor. Pulse until smooth and combined. You should be able to stir the mixture but if it’s too thick, add in another tablespoon or two of honey. Once the mixture is smooth, transfer it to a large bowl, and stir in 1 1/2 cups oats, 1 cup shelled pistachios and 1 cup dried cranberries until evenly combined. I found it was easiest to combine everything by mixing with my hands but it does get pretty messy! Once everything is well combined, cover the mixture and refrigerate for at least 30 minutes. I actually refrigerated overnight, which was great because that means you can make your mixture in advance and don’t have to scramble at the last minute! Once the mixture is cool (and easier to work with), use a spoon or cookie scoop to shape it into your desired size of energy balls. (Mine were about 1-inch in diameter.) I placed the energy balls on a lined baking sheet and put them back in the refrigerator to set. These are great because you can cover and store them in the refrigerator for up to 2 weeks so they make a great snack that you can just grab and go.
