Recipe Roundup: Cauliflower Fried Rice

Wondering what you can do with that bag of frozen cauliflower rice? Try this super easy, tasty, low-carb recipe by Jennifer Fisher.

Servings: 2

INGREDIENTS

  • 2 tablespoon olive oil
  • 4 green onions, chopped
  • 1 garlic clove, chopped
  • 1 (24oz) bag cauliflower rice
  • JF Spicy Salt, to taste
  • 10 turns of fresh cracked black pepper
  • 1 tablespoon coconut aminos
  • 2 eggs, beaten

Toppings:

  • Green onion, sliced
  • Sesame seeds
  • Chili sesame oil (I like Trader Joe’s)

INSTRUCTIONS

  1. In a large pan, begin to warm the olive oil, green onion, and garlic, allowing these to soften and become translucent over the heat.
  2. Add in the cauliflower rice, incorporate well and raise the heat to medium/medium-high. Don’t rush the cooking process here, let this become crisp and slightly brown.
  3. Season with JF Spicy Salt and fresh cracked black pepper.
  4. Pour in your coconut aminos; combine throughout.
  5. Pour in both eggs, let them cook over the heat, and combine throughout.
  6. Serve warm topped with additional green onion, sesame seeds, and chili sesame oil.
