Lazy Gyal Jerk Chicken

Here is my recipe for the easiest jerk chicken I have ever made. Y’all this is an under two hour meal that packs the flavor and heat. For all my pepper lovers, it does not hold back on spice.

Ingredients
4 chicken thighs, skin on
6 cloves of garlic
salt & pepper, to taste
1/2 cup Walkerswood jerk chicken marinade
2 tablespoons burnt sugar or browning

Directions

Clean and pat dry the chicken thighs. Place them in a large bowl and season with salt and pepper. Look, I’m not going to tell you how much salt and pepper you should use, but please loosen your wrist for this part. Nothing is more disappointing that biting into juicy, perfectly cooked, flavorless chicken. So make sure you add enough. I also added in some ginger, ground allspice, and basic poultry seasoning to the bowl. Add the walkerswood marinade and massage it into the chicken thighs. If y Re using your hands, don’t touch a damn thing afterwards, especially your face or you’ll regret it.

Let this marinate for at least 30 minutes. You can definitely leave it for longer, just remember that the longer the chicken sits, the spicier it will be. Besides, the beauty of this meal is how little time it takes to make something so delicious so let’s not seek any extra brownie points for a full-on overnight marinade, yeah?

Preheat the oven to 400 F. Add the two tablespoons of brown sugar to a cast iron skillet and spread it evenly across the bottom. Place the cast iron on the middle rack in the oven and brown the sugar. Once the sugar looks golden brown and starts to bubble remove the cast iron skillet from the oven and add the chicken, skin side down. Cook for about 20 minutes (you should probably get that rice started now) and then flip. Cook for another 20 minutes, skin side up. Sometimes if I want the skin to get a little crispier, I’ll turn my oven in broil for about 5–7 minutes. Remove the skillet from the oven and let the chicken sit for a few minutes before serving. I chose to pair my jerk chicken with some coconut milk flavored rice, another Jamaican staple. Do you guys care about how I make the rice?
