A South Indian Vegetarian Meal You Should Try In Kerala

India is undoubtedly the country with the largest number of vegetarians in the world. In this country, where 40 percent of the population is vegetarian, vegetable dishes are readily available. The multi-colored curries made of vegetables make the tongue tingle just by seeing the bowl filled with them.

There is a saying in our area. A person who can make a delicious vegetable dish with flavor can be called a real cook. In a way, I agree with that. Because vegetarian food is the tastiest food, I have ever eaten in my life. The memory of the meal I had years ago is still on my tongue.

Today I am going to introduce that feast. Multi-colored curries served on banana leaves and pearl white rice, like a king, in the middle of it, along with sambar.

The banquet starts with Jaggery Upperi and Banana Upperi and ends with Papadam, Banana, and Payasam, a traditional dessert. Between these two, green, yellow, red, and pink colored curries are eaten along with rice.

Each curry has its own sub-category, like Theeyal, Thoran, Kalan, Avial, etc. To make Theeyal, we usually use onion, bitter gourd, or aubergine. Cabbage, beans, or spinach are used to make Thoran. Buttermilk is the main ingredient of Kalan curry, made with plantains or yams.

So each curry in this 30-dish banquet has its own flavor, and once tasted, one can easily understand what makes each one different from the other.

Mainly prepared for Onam, a traditional Kerala festival, this Sadya is an integral part of many other traditional celebrations in Kerala.
