Last October , I visited Yachiyoden Shuzo distillery in Kagoshima , Kushu .
It located in a small mountain valley and there are very clean water .

They are making Shochu by this water and sweet potatos — its specialties in this region.

They re-started their distillery about 10 years ago after passing through the rest period.

They do making shochu very traditional way . — making sweet potato by themselves , brewing by using small pot on semi-underground and so on .

I bought their typical brand — yachiyoden shiro(white).
It made from sweet potato and malted rice.
Flavor is very floral and taste is lighter.
