Tanya’s Nanaimo Bars

OH CANADA, OH CANADA….

This is a twist on the original recipe. This is more vegetarian friendly; however, it does use an egg and pudding mixture. This has replaced the butter and milk with Earth Balance and Coconut Milk.

The Nanaimo bar is a no bake dessert bar. It was named after the west coast city, Nanaimo, in British Columbia. Other names this dessert goes by is “New York Slice,” “London Fog Bar,” and “New Brunswick Bar.”

Recipe

Crust:

Ingredients in order of Usage:

  • ½ cup Earth Balance (or butter)
  • ¼ cup White Sugar
  • 5 Tbsps. Unsweetened Cocoa Powder
  • 1 Beaten Egg
  • 1 ¾ cups crumbled graham cracker (finely ground)
  • 1 cup Unsweetened Coconut Flakes
  • ½ cup Finely Chopped Almonds

Instructions:

The water in the bottom of the double boiler should be simmering. Place the Earth Balance, Sugar and Cocoa into the top part of the double boiler. Melt the Earth Balance and stir the ingredients until combined. Slowly, add the beatened egg to the Earth Balance mixture. Whisk constantly, or you will have a scrambled egg chocolate mixture (yuck!). You should whisk until the mixture has thickened and forms a nice glaze over the wires of the whisk.

Remove the mixture from the heat. Add the graham crackers first and combine until mixture is chcolate brown. Next, add the coconut flakes and combine well. Finally, combine the almond dust into the mixture. Once again should be combined until the mixture is a dark chocolate brown.

Press this mixture into the bottom of an 8x8 sized pan (or 4X4 if you want a thicker base). Set aside.

Creamy Center

Ingredients in order of Usage:

  • ½ cup Earth Balance (or Butter)
  • 3 Tbsps. Whole Coconut Milk (with fat) (Or Heavy Cream)
  • 2 Tbsps. Instant Pudding (or Custard Powder)
  • 2 cups Powdered Sugar
  • 1 tsp Vanilla
  • Several drops of yellow food coloring (optional)

Instructions:

Whisk together the Earth Balance, Coconut Milk, vanilla, food coloring and instant pudding. When this part is done, the mixture should be light yellow, fluffy and thick. Finally, slowly incorporate the powdered sugar, whisking as you do so.

Pour this mixture on top of the crust. Use an offset spatula to smooth over the crust. Place this into the freezer.

Chocolate Glaze

Ingredients in order of Usage:

  • 4 oz semisweet chocolate chips
  • 2 tsp coconut oil

Instructions:

Place both ingredients into a microwave safe bowl. Microwave for 1 minute. Take the bowl out and continue to stir the mixture until smooth.

Take out the frozen bars. Place this glaze over the top. Using an offset spatula, smooth over the Creamy Center.

Place the bars into the freezer covered for up to two days (longer if you don’t mind freezer burn).
