Raw Cauliflower Couscous
Mediterranean raw couscous inspired by Jenne Claiborne of Sweet Potato Soul
Jack, pictured below, comes to our place a couple of times a week to tend to the garden. Jack is in his 70’s, he’s an Italian immigrant, he’s delightful and he has the greenest thumbs we’ve ever seen. Each visit he brings us veggies from his own garden, all grown naturally with the tender, loving care of his green thumbs. Jack really loves his garden and his veggies taste amazing. This week he brought us a large Cauliflower, which went into a Mediterranean raw couscous inspired by Jenne Claiborne of Sweet Potato Soul.
Yield: A very large bowl of couscous, enough to feed 8 people as a side salad
Equipment: Food Processor
Ingredients:
1 head cauliflower, chopped and processed finely until it resembles rice, remove from food processor and put into a separate bowl and put aside
In the food processor:
3 carrots roughly chopped
1 red pepper
1 clove garlic
1 tbsp turmeric powder
1/2 tsp cayenne pepper
1/2 tsp black pepper
1/2 tsp sea salt
3 tbsp raisins
1/4 cup mint leaves, chopped
1/4 cup parsley, chopped
Process for about 30 seconds until all combined and add to the bowl of cauliflower couscous.
Mix in with hand the miso, tahini, lemon juice and olive oil until well combined. .
1 1/2 tbsp light miso
1 1/2 tbsp tahini
3 tbsp lemon
1/2 cup cherry tomatoes, halved and used on top as garnish
