Spiced Apple Compote

This spicy is super simple to make and you can use the lovely Gala apples from the GRIM-box of this week (week 37). The Gala apples are perfect for spicy dessert like this one.

Ingredients

5 apples
1⁄2 dl of water
2 tbsp of sugar
1 tsp cinnamon
1 lemon
1 bottle of Alpro soy whip cream
1 stick of vanilla (optional)
50 g Walnuts

How to make it:

  1. — Start by cutting apples into smaller bite-size pieces, add to a pot together with water, sugar, the juice from the lemon and cinnamon. Cook on low heat for 30–40 minutes or until the apples are soft and tender. If you want a more smooth compote you can peel the apples and cook them for longer. Cooldown when finished.
  2. — Whip the Alpro soy cream and add fresh vanilla from 1 pod of vanilla.
  3. — Toast the walnuts in a dry pan at medium heat.
  4. — In a bowl or glass add the compote in the bottom and finish off with whipped cream and toasted walnuts.

Super simple, yet super delicious!
