Tea-time! Muffin time!

Here’s an interesting recipe of soft grape muffins which is very easy!

Ingredients for 12 muffins

  • 350gr flour
  • 150gr sugar
  • pinch of salt
  • 1/2 teaspoon bicarbonate of soda
  • 1 sachet baker’s yeast
  • 2 tblsp honey
  • 4 tblsp olive oil
  • 1 tub natural yogurt
  • 2 eggs
  • 250gr grapes

Start by mixing the dry ingredients in a large bowl: flour, sugar, yeast, bicarbonate of soda, and salt. In another bowl, break the eggs, add the olive oil, yogurt, and honey and lightly whisk with a fork until mixture is smooth. Blend the liquid mixture with the dry mixture with a rubber spatula — mix delicately and for few minutes only. Then take the grapes, wash them, cut them in 2 and remove the seeds and add to the mixture.

Prepare a muffin baking tray, grease with olive oil and sprinkle with some flour. Fill in the holes 3/4 with the mixture and bake in a 180 degrees celsius oven for around 20 minutes until brown and cooked. Enjoy with a cup of tea!
