Following last Sunday’s success with the home-made bread I gave it another try this weekend however with a different method for the dough, as suggested by my Mum, and I must say that it gave better results!

For the dough:

  • 525g plain flour
  • 1 tbsp sugar
  • 1 1/2 tsp salt
  • 3 tbsp olive oil
  • 1 pckt instant dry yeast
  • 2 tblsp fresh rosemary, finely chopped

For the filling:

  • 200g sausage meat, crumbled
  • 1 small onion, finely sliced

Whisk yeast, sugar, salt and oil in a bowl. Add 300ml warm water and set aside for 10–15 minutes until frothy. Place flour in a large bowl and add yeast mixture and chopped rosemary. Add a little water if needed and blend together with mixer. Transfer to a floured surface and knead for 5 minutes. Leave to rest in an oiled bowl covered with clingfilm until it doubles in size.

Preheat oven to 170 degrees celsius. Knead the dough for few minutes and open in a large rectangle. Scatter the sliced onions and the sausage meat and roll the dough to form a cylinder. Cut slices of 3 cm and place in large oven-proof dish on top of a baking sheet. Brush tops with some olive oil and leave to rest for 10 minutes. Bake in the oven for around 25 minutes and serve warm or cold.
