Legal tuna
If you are lucky enough to find fresh tuna available at your fishmonger then make the most of it since this species has become a very precious and expensive one! I tried the following recipe which turned out to be very delicate and tasty.
Fresh tuna with crispy potatoes

Ingredients for 4 persons:
- 4 fresh tuna steaks of 150/200gr each
- 400g potatoes
- 1 large white onion
- fresh oregano
- olive oil
- 1 glass white wine
- salt & pepper
Start by peeling, washing and drying the potatoes. Then with a fine knife or mandolin slice them in wafer thin pieces. Prepare a pan with cold water, throw in the potatoes and bring to boil. Leave to cook for 5 minutes. When ready put the potatoes under cold running water and put aside.
While the potatoes are boiling you can finely slice the onion add to a pan with some olive oil, 2 tblsp water, fresh oregano leaves, salt and pepper and leave to soften on low heat. When the onion is ready, remove it from pan and leave it to cool.
Meanwhile, take a baking dish cover it with baking paper and place the tuna steaks next to each other in the center of the dish. Season each steak with salt and freshly ground black pepper from both sides. Then place the sliced onions on top of the steaks, add the potatoes covering even the sides of the tuna steak so that it remains moist. Pour the glass of white wine on top of everything, add some olive oil, salt and pepper and put into a 200 degrees preheated oven for around 25 minutes.
