Marinated lamb kebabs

You need to try this traditional Greek tangy recipe. Souvlaki, also known as Greek fast food is a dish made of grilled chunks of meat or vegetables on a skewer. The most popular meat used for this recipe is lamb.

Whilst basting in the February sun today we char-grilled Souvlaki lamb kebabs.

Lemon marinade for lamb souvlaki

For perfect results marinade the meat overnight.

Ingredients

  • 1 kg shoulder of lamb cut into large cubes
  • 2 sprigs of fresh green garlic
  • 2 tsp dried oregano
  • grated zest and juice of 1 lemon
  • 2 bay leaves
  • 3 tblsp extra virgin olive oil
  • salt & pepper

Mix together the marinade ingredients and add the lamb chunks. Stir well ensuring that all the meat is covered. Leave overnight refrigerated.

Line the meat on skewers and cook on BBQ for around 10 minutes until they are pink or leave them some more minutes to have well-done meat.

We served them with a pineapple and bacon rice.
