Grilled peaches with almonds & ricotta

Need a fruity refreshing dessert for a BBQ? This is the right one. You need:

  • 4 robust peaches
  • 250g ricotta
  • 1 lemon
  • 100g slivered almonds
  • 6 tblsp honey
  • 2 tblsp sugar

Place the slivered almonds in a large non-stick pan and toast them without using any oil. Turn them frequently with a wooden spoon. When ready transfer them into a bowl and mix well with the honey. Following, wash well the peaches, dry them up and halve them. Grill them on a hot BBQ or grill pan for around 2 or 3 minutes from each side. Whilst they cook, grate the rind of 1 lemon and squeeze to retain lemon juice. Take the ricotta put it into a bowl and whisk it well until it becomes creamy, gradually add the sugar, lemon rind and lemon juice. (I suggest you taste it before adding all the lemon juice). When the peaches are ready you can put some of the creamy ricotta in each plate, place the 2 halves of the peaches on top of each other and scatter the honeyed almonds on top. You can also serve with some chocolate ice-cream!
